Avocado and Shrimp Open Omelette
A silky-smooth omelette that is simple to prepare. Pour in the egg mixture, top with the ingredients, and voila!

  • 4 eggs
  • A pinch of salt
  • 1/3 tablespoon Parmesan cheese
  • 10g butter
  • 4 pieces boiled shrimp
  • 1/2 avocado
  • 2 baby tomatoes
  • 1 punnet white mushrooms
  • 30g cream cheese
  • black pepper, to taste

    Mix the eggs, salt and Parmesan cheese. Remove the skin from the avocadoes and cut into cubes. Cut the tomatoes in half. Slice the white mushrooms.

    Heat butter in the Le Creuset 18cm Mickey Mouse Marmite and when melted, spread it over all the pan. Add the egg mixture into the casserole, cover and cook over a medium heat for 3 minutes.

    Open the lid and sprinkle over the shrimp, avocado, tomatoes, mushrooms and cream cheese. Cover, cook on medium heat for 5 minutes. Turn off the heat and let steam for 5 minutes.
